If you have a Trader Joe’s anywhere near you, go now! They have super-cheap food that is wonderfully tasty. Katie and I made a mushroom, spinach, and goat cheese pizza for less than $6 and had leftovers. Here’s what we did:
SpinGoatShroom Pizza:
-Trader Joe’s Garlic and Herb Pizza Dough
-Trader Joe’s Caponata Marinara Sauce
-Chevere Goat Cheese
-Spinach
-Mushrooms
Preheat oven to 400
Lightly spray pizza pan
Spread out dough
Add toppings as desired
Bake for about 15-18 minutes
That’s it! It was better than most “gourmet” pizzas I’ve had in the past that cost twice as much. And, we’re using the rest of the sauce, mushrooms, and spinach to make a pasta sauce for our carbo-load dinners before our workouts. Trader Joe’s gets a check-plus.

Brooke was telling me about Trader Joe’s yesterday. Before you guys clued me in, I thought it was another one of these “organic” grocery stores where you have to perform feats of yoga in the checkout lane. It actully sounds pretty cool…I’ll check it out.

BACHELOR CUISINE UPDATE!
There are currently 8 servings of Ole (imagine an accent over that “E”) Spanish rice cooking on “low” in a crockpot on my counter. I set it for TEN HOURS! If this comes out it will be a minor triumph in my adult life. I actully got up before 8 this morning and browned some ground turkey…and I couldn’t see for about half a minute after chopping an onion; the hardships we artistes face!
In another triumph of adult life, I took two pairs of pants to the dry cleaners that haven’t been cleaned probably since Warren Christopher was our Secretary of State.
